Vinification
The grapes for the Bombas Cap Classique Brut were hand-picked from select vineyards in the Robertson Valley and crafted from the classic bubbly varieties Pinot Noir and Chardonnay. Harvested crate by crate, whole bunches were gently pressed at a very low recovery rate of just 420 litres per ton. Primary fermentation took place in stainless steel at 14°C, followed by secondary fermentation in the bottle. The wine matured for a minimum of 44 months on the lees before being meticulously riddled and disgorged by hand. A limited production of only 12,500 bottles was released.
